Here are some quick and easy no-bake recipes and simple ideas that will surely be crowd-pleasers!

Strawberry Spinach Salad Twist:

In a 13" x 9" cake pan, layer spinach (and other desired ingredients like walnuts and grilled chicken). Create a 4" x 4" square outline using blackberries or blueberries, filling it completely. Leave some green around the border, then alternate rows of cubed watermelon (3 rows) and feta cheese (2 rows). Keep the dressing on the side and add it when you're ready to eat. This salad pairs well with walnut, poppyseed, or balsamic vinaigrette.

Fruit Skewers:

Assemble fruit skewers using strawberries, blackberries, and jicama. Cut strawberries and jicama to match the size of blackberries, then thread all three onto a 10" skewer in a red, white, and blue pattern. Make them in advance, cover, and store in the refrigerator until ready to eat.

Individual Patriotic Mousse Cups:

Add a yogurt or tofu mixture to 5-8 oz. clear plastic dessert cups, martini glass tumblers, or tall square plastic dessert cups. Thread fancy toothpicks with alternating strawberries and blueberries and place two toothpicks on top of the "white mixture." Make these ahead of time and enjoy.

For the yogurt base, add a small amount of sweetener (honey, agave, maple syrup, etc.) to Greek yogurt and mix. Alternatively, crush two Vanilla Meringue cookies and fold them into the Greek yogurt. For the tofu base, mix 8 oz. tofu with 1/4 cup maple syrup and 1/4 teaspoon vanilla extract. Blend the ingredients in a food processor or blender to the desired consistency. You can also mix in bananas and/or walnuts to change up the flavor profile.

Patriotic Cupcakes:

Make red velvet cupcakes and top them with white frosting, then add three blueberries for a patriotic touch. Alternatively, make vanilla cupcakes but add "beetroot powder" to make them red. You can also use a vanilla base cupcake mix and mix the beetroot powder with the white frosting.

Firecracker Chicken:

Ingredients:

1 lb chicken breasts, cut into 1-inch pieces

1/4 cup chopped green onions

1 egg, beaten

1/4 cup olive oil

2 garlic cloves, minced

1/3 cup hot sauce

1 tsp chili powder

Juice of 1 lime

1/4 tsp red pepper flakes

1 tbsp sesame seeds

Crushed black pepper

Himalayan salt, to taste

1 tbsp water

 

Instructions:

  1. Soak the chicken in the beaten egg.

  2. Sauté the chicken in oil until lightly browned.

  3. For the sauce, mix garlic, hot sauce, water, lime juice, red pepper flakes, chili powder, sesame seeds, salt, and pepper.

  4. Place the sautéed chicken in a lightly greased casserole dish and cover it with the sauce.

  5. Bake at 350 degrees Fahrenheit for 20 minutes.

  6. Toss with green onions and serve over brown rice, farro, or your grain of choice.
